3/4 cup softened butter
1 egg
1 1/2 cup yellow D brown sugar or Organic coconut sugar
1/4 cup water
1 tsp vanilla
1 cup rice flour
1/2 cup tapioca
1 tsp xanthum gum
1 tsp salt
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp tsp nutmeg
3 cups certified gluten free oats
1-8oz pkg Chocolate chips
In a mixing bowl, cream softened butter, sugar, egg, water and vanilla. Mix toughly, then add flour, salt, soda and spices. Mix well. Fold in oats and chocolate chips. Roll into tablespoon size balls, place on greased cookie sheet. Bake 12-15 minutes at 350
